In Honor of National Pecan Month – A Healthy and Delicious Muffin Recipe

Our family loves quick and healthy breakfast options that we can eat together before my husband and I head off to work. I usually experiment with different muffin recipes over the weekends and have them ready for us to grab with our hard-boiled eggs and bananas.  Coffee is a given!  Below is my most recent healthy and delicious muffin recipe that all 3 of us love! And, in honor of National Pecan Month, I thought it would be most appropriate to share. 

Apple Pecan Oat Muffins

Preheat your oven to 325°.  Prepare a muffin pan with 12 paper linings or spray with cooking spray.

Ingredients:

1/2 cup of flour (I use whole wheat, but white is OK too)
1/2 cup of flaxseed meal
1/2 cup of old fashion oats
1 tsp Nutmeg
1 tsp Cinnamon
1/4 tsp Ginger
1/4 tsp salt
1/4 tsp baking soda
1 tsp baking powder
3/4 cup of sugar
1/4 cup cooking oil (or applesauce)
1 egg
1 apple – finely graded (with peeling)
1/2 cup of pecans (finely chopped or ground)*
6 prunes (finely chopped)*

Directions:

Mix all dry ingredients together.  Stir in wet ingredients.  Add in nuts and prunes at the end. Give it a good stir.  Spoon into 12 muffin tins. Bake at 325 degrees for 18-22 minutes depending on your oven.  Remove from pan when slightly cooled. 

*Depending on your child’s age you will want to finely chop or grind the nuts and prunes.  You can use other nuts as well.
