A Fresh Memorial Day Salad Recipe

Memorial Day is the unofficial start to summer and there is no better way to kick-off summer than with a great grilling party or picnic, including a fresh and light salad.  This salad is fast and easy to make and tastes great, plus it is gluten-free and soy-free.  Enjoy it this weekend at your Memorial Day BBQs with chicken, brats or any other grilled fare!

Garbanzo Bean Salad
Prep Time: 10 minutes

2-8 oz. bags of romaine lettuce
1 small bag of shredded carrots (or shred 2-3 large carrots)
1/2 green pepper – sliced
1/2 red onion – sliced
1 – 15 oz. can of garbanzo beans, well drained
2/3 cup of extra virgin olive oil
1/3 cup red wine vinegar
1 T. cumin
3 T. fresh minced garlic (or 3 garlic cloves-minced)
1 tsp. salt
2 tsp. pepper
1/2 cup of Cilantro – Chopped

Directions:

Using a large, pretty bowl mix together the first 5 ingredients.  In a shaker or mason jar, combine the oil, vinegar, cumin, garlic, salt and pepper.  Shake/mix well.  Pour over the salad and stir.  Let the salad stand for 15-20 minutes before serving.  Add the cilantro and give a quick stir just before serving. 

Notes:

This recipe makes about 4-5 servings and travels well.  In addition, bean variations work great. I have doubled the recipe and used 1 can of garbanzo beans and 1 can of black beans.  It is very pretty with lots of colors.
