A Fresh Sweet Corn Salad Your Whole Family Will Love

With the weather at 100° + this week, it makes me think of fresh and light salads for lunch and dinner to beat the heat.  This fresh sweet corn salad is one your whole family will love. My daughter ate two servings of it tonight for dinner.  I can not wait to have fresh tomatoes from my garden to use.

Fresh Sweet Corn Salad

2-3 cups of fresh sweet corn kernels, cooked and cool (Probably about 3-4 ears)
1 can of black beans, drained
1 can of diced tomatoes, drained or 2 large tomatoes diced
1 bunch of green onions, diced
1/2 cup of diced celery, cut from the top of the stalks to include leaves


1 Tbsp of Penzey’s Chip and Dip Mix
1/2 cup of vegetable oil
1/4 cup vinegar
1 Tbsp. fresh minced garlic or 1/2-1 Tbsp dry minced garlic
salt / pepper

Cook the corn on the cob and cool.  Mix the dip mix with 1 Tbsp. water and let it sit for 5 minutes.  Mix the dip mix, oil, vinegar, garlic, salt and pepper together in a jar.  Cover and shake. Let sit aside while you mix the salad.  Cut the kernels from the cob.  Mix the corn, beans, celery and onion together.  Pour the dressing over the salad.  Mix well. Chill for 1-2 hours before serving.  Stir before serving.

This salad will make about 6-7 side dish servings or 4 lunch salad servings.

    LOVE this salad! I use fat-free Itailan dressing. YUM!!

      I know which one you are talking about – that is an awesome one too! But you’ll have to try this version…the dressing is different and it doesn’t have green peppers or cilantro. Similar look and texture, but a bit different flavor.
