Healthy Banana Pecan Maple Muffins – Great for Famiy Camping Trips

As you pack up the cooler and camper for your family’s summer camping trip don’t forget to bake a batch of these Healthy Banana Pecan Maple Muffins.  They’re loved by everyone in the family, easy to make and store well.  If you follow Weight Watchers, they are approximately 2 points.

Healthy Banana Pecan Maple Muffins

3/4 cup of flour
3/4 Quick Cooking Oats – Uncooked
1 1/2 tsp. of Baking Powder
1/4 tsp. of Baking Soda
1/4 tsp. cinnamon
1/4 tsp. of Salt
1 egg
1/4 cup unsweetened applesauce
1/4 cup of sugar free maple syrup
1 tsp. vanilla
1 cup of mashed banana – I leave mine a little chunky for extra texture
1/4 cup finely chopped pecans

Directions:

Preheat the oven to 325°.  Mix the dry ingredients together.  Make a “well” in the middle and add the eg, applesauce, syrup, vanilla, and banana.  Mix well.  Stir in the pecans.  Spoon into 12 muffin cups with muffin papers. Bake for 20-23 minutes.  Let sit in the pan for 2-3 minutes and then remove from the pan to cool on a rack.
