Simple, Healthy Cake for Your Family

With school back in session, quick dinners, snacks and desserts are a must.  But we also need and want them to be healthy, yet tasty.  While watching Hungry Girl on The Food Network today (note: while running on the treadmill, watching The Food Network can be dangerous!), she showed a simple, tasty and lower-calorie cake option with only 2 ingredients: cake mix and diet soda (or club soda). 

I just made a white cake + Diet Pepsi version – YUM!!  I am waiting to try lemon cake + club soda as well.  The cake makes 12 servings, each with only 170 calories.  For complete recipe instructions and other combinations log onto Hungry Girl.

Diet Soda Cake

Ingredients:

1 cake mix
1 – 12 oz. can of diet soda or club soda

Directions:

Preheat your oven to 350° and spray a 13×9 pan.  Mix the 2 ingredients together and pour in the pan.  Bake for 35 minutes.  If using a different pan size, check the cake mix box for baking times.  ENJOY!

With it being this easy and low-calorie, we can all enjoy dessert with a Piece of Cake!
