Pumpkin Pie for Breakfast – Yes, and It’s Healthy

As the seasons come to change, so does my diet to include the comfort foods of life, even for breakfast.  As I often do after making a muffin or bread recipe that calls for canned pumpkin, I look for ways to use the remaining canned pumpking that is left over (why can’t a recipe use the whole can of pumpkin?).  What I discovered was a sensational, energy-packed, quick breakfast that warms our soul for the entire day.  I call it Pumpkin Pie Breakfast.  And it takes about 2 minutes to make, which is great for getting breakfast made on school/work mornings.  It’s guaranteed to be loved by your family!

Pumpkin Pie Breakfast

1 packet of Oat Fit Maple Brown Sugar Oatmeal (individual)
1/4 cup of canned pumpkin (not pumpkin pie filling)
1/4 cup Milk

Prepare oatmeal and water according to package in a microwave safe bowl.  Stir in 1/4 cup canned pumpkin.  Cook in the microwave for about 90 seconds.  Remove and stir in 1/4 cup milk.  ENJOY!!

The maple brown sugar flavors give it the sweetness it needs without sugar.  Total calories equals about 150 (using 1% milk).  Add a banana or other fruit and you have a healthy start to your family’s day in under 2 minutes!
